Five Easy PiecesFive Easy Pieces (1970)

IMDB rating: 7.50

Plot: Bobby Eroica Dupea (Jack Nicholson) comes from a well-bred family of musicians, and once showed great promise as a concert pianist. By nature a restless, angry individual, Bobby left his family and his music when he could no longer endure the dull, cloistered routine of daily practice. He took to the road, wanting to “see the world,” and hopefully find something or someone to quell his inner turmoil. He has settled in a small town as an oil rigger, where his life consists of going to work, arguing with his dimwitted but loving girlfriend Rayette (Karen Black), and bowling every night with his friend Elton (Billy “Green” Bush). Not surprisingly, this routine begins to disgust Bobby and, fed up, he decides to travel to Puget Sound, Washington to pay his family a visit. Leaving Rayette at a nearby motel, Bobby goes home and is reunited with his family.

Would this make a good freezer recipe? If so, how would you adapt it?
EASY LEMON GLAZED CHICKEN
Printed from COOKS.COM

——————————————————————————–

1 chicken, cut in pieces
1 tsp. salt
1/4 tsp. pepper
1 (10 oz.) jar apricot preserves
1/4 c. prepared yellow mustard
2 tsp. gated lemon peel
1/3 c. fresh lemon juice
1 lemon, sliced thin

Place chicken parts skin side up in a shallow baking pan. Sprinkle with salt and pepper. In a small sauce pan mix preserves and mustard and heat, stirring about five minutes. Stir in lemon peel and lemon, juice. Pour sauce over chicken and bake at 375 degrees for 30 minutes. Top each piece of chicken with lemon slice. Baste, if necessary, during baking.

Even though I’ve never made this exact recipe, I can tell you it will freeze well. There’s nothing you need to do extra. I wouldn’t put lemon slices on the top for freezing because the sliced lemons just don’t look all that great when they thaw out.

Make sure the dish is room temperature when you put it in the freezer and that all the chicken is covered.

You can freeze this in a container or freezer bag. I like bags because they take up less room. Then I slip the frozen freezer bag into a plastic grocery bag and tape it shut and label it. The double wrap helps with freezer burn.
